Prawn & Bindi curry (Kerala style) - Carol D'Souza Ingredients: 1 Kg prawns 250 gms bindi 1 coconut 2 piece ginger 12-15 green chilies ¼ tsp turmeric powder 15 flakes garlic 2 big onions Tamarind as per taste Salt as per taste 2 tbspn coconut oi Method: 1. Devin and wash prawns. add 1 tsp of salt and keep aside. 2. Slit green chilies vertically, chop ginger, garlic and onions. 3. Grind only coconut and turmeric powder. 4. Wash and cut bindi. Boil in tamarind water. 5. Heat the coconut oil in a pan. add onions and fry till golden brown. Add the ground masala (coconut & turmeric powder) and fry for 2- 3 minutes 6. Add green chilies. Then add the chopped ginger and garlic. 7. Add prawns and water (about a cup and a half) 8. Boil about 4 -5 minutes and then add the bindi. |
